What kamado grills are

Kamado grills are egg-shaped ceramic cookers descended from Japanese mushikamado clay vessels. The thick ceramic walls retain heat, the precise venting controls combustion, and the rounded shape circulates heat efficiently.

How a kamado grill cooks

Kamados handle the full range: low-and-slow smoking (225°F for 12+ hours), indirect roasting (350°F), high-heat grilling (450–550°F), and pizza (700°F+). A heat deflector plate converts the kamado into a smoker; remove it for direct grilling.

The cooking style rewards patience. Kamados change temperature slowly — once you settle in at 225°F, the kamado will hold it for hours, but climbing from 225°F to 450°F takes 20–30 minutes.

What to look for
