What pellet grills are
Pellet grills are convection ovens that burn food-grade hardwood pellets. An electric auger feeds pellets into a firepot from a hopper. A hot rod ignites the pellets, and a fan circulates heated air across the cook surface. A thermostat or PID controller regulates temperature by adjusting auger speed and fan output.
How a pellet grill cooks
Pellet grills are indirect heat cookers. They smoke at 180–250°F, roast at 300–400°F, and grill at 400–500°F. Some premium models have an open-grate mode that exposes food to direct flame for searing.
The cook style most pellet grills favor is low and slow: ribs, brisket, pork shoulder, whole chickens. They produce respectable results across most of the temperature range with minimal intervention.
